This salad is absolutely delectable. Every time we serve it, someone asks for the recipe. The secret isn't just the ingredients, it's the preparation. Taking the time to finely chop everything creates a salad that's balanced, flavourful and easy to eat. The idea is simple: treat the salad like a rice dish. Every ingredient is cut small so each mouthful delivers the perfect mix of textures and flavours. It works beautifully as a side dish, but it's equally satisfying on its own. Even kids who normally avoid salad seem to enjoy this one. Once you try it, you'll understand why it's become a favourite at our table.
A sharp knife is the single most important tool for this recipe. Blunt knives crush and bruise the vegetables rather than cutting them cleanly, which affects both texture and flavour. If you do not have MEA water, filtered water works well. Leftovers can be stored in an airtight container in the fridge for up to one day, though the texture is always best on the day it is made.
Serve alongside a simple rice dish, roasted organic chicken or slow-cooked lamb. It is equally satisfying on its own as a light lunch with a drizzle of extra olive oil.
Fill a large bowl or clean sink with MEA structured water. Place all your whole vegetables including the carrots, tomato, parsley, kale, cabbage and cucumbers into the water and allow them to soak for 15 to 20 minutes. This step re-energises the produce, helps remove surface residues and wakes up the natural vitality of each ingredient. We never skip this step.
Lift the vegetables out of the water and lay them on a clean tea towel or paper towels. Pat everything dry gently. Damp vegetables will dilute your dressing and make the salad soggy, so take a moment to dry them well.
Prepare your cucumbers first. Slice them in half lengthways and use a small spoon to scoop out the seeds and watery centre. Discard the seeds. This keeps the salad crisp and stops it going watery in the bowl. Finely dice the cucumber flesh into small, even pieces.
Using a sharp knife, finely dice the carrots into very small pieces roughly the size of a grain of rice or a little larger. A sharp knife is important here. It gives you control, keeps the cuts clean and makes the whole process safer and faster.
Finely dice the tomato into small pieces, similar in size to the carrot and cucumber. Set aside.
Strip the kale leaves from their tough stems and discard the stems. Stack the leaves, roll them tightly and slice into thin ribbons, then turn and chop across to create small, fine pieces. Do the same with the cabbage, chopping until every piece is small and consistent.
Gather the parsley into a tight bunch and rock your sharp knife over it until it is very finely chopped. Do not rush this step. Finely chopped parsley distributes through the whole salad and delivers flavour in every single bite.
Add all the prepared vegetables and parsley into a large mixing bowl. Toss gently with clean hands or two large spoons to combine everything evenly.
Drizzle over the olive oil and the apple cider vinegar. Season with Celtic sea salt. Toss thoroughly to coat every piece. Taste and adjust the vinegar and salt to your liking. We tend to be generous with the apple cider vinegar because it lifts the whole salad beautifully.
Transfer to a serving bowl and bring it straight to the table. This salad is best served fresh. In our house it never lasts long and someone is always reaching for seconds before the main dish is finished.
