The first time you drink structured water, nothing dramatic happens, and there is no rush or shift you can name. Over the following weeks we noticed small changes: a different feel to the day, bodies that recovered more willingly and exercise that felt easier. That experience sent us into the research, and this is our attempt to walk you through the science of structured water, also called EZ water. We believe the electrical charge of the water in and around your cells may matter far more than most of us have ever been told.
What Structured Water Actually Is
Most of us learned at school that water has three phases: solid, liquid and gas. Research from the University of Washington, led by biophysicist Dr Gerald Pollack, describes a fourth phase that forms wherever water meets a surface inside a living system. His laboratory found that water next to water-loving surfaces arranges itself into an ordered, gel-like layer with the formula H3O2 rather than the familiar H2O [3]. He called it exclusion zone water, or EZ water, because it pushes out even very small particles, working a bit like a natural filter inside the cell [8].
A simple way to picture it: ordinary water is like a crowd moving randomly down a street, while EZ water is the same crowd lined up in an orderly procession. According to Pollack, nearly all the water inside a healthy cell is in this ordered state, working like a rechargeable battery that light helps to charge [12]. He describes how, when that order is lost, the cell's electrical charge drops and it becomes less able to do its work [4].
This is where drinking structured water comes in. We believe water in its natural state, like the water in a clean, flowing mountain stream, carries a permanent negative charge. Water that sits for long periods in dams, reservoirs or tanks is described as losing that ordered structure as it stagnates [5]. So two glasses of water that look identical may, in our view, behave quite differently once they reach your cells.
The Electrical Life of Your Cells
Your body is made up of around 40 trillion cells, and every one of them runs on electrical charge. The difference in charge between the inside and outside of a cell works like an engine, driving nutrient uptake, waste removal, nerve signals and repair. Pollack's research describes a cell's electrical charge as a direct reflection of its health, not just a side effect of other processes [2].
When that charge is strong and negative, the cell communicates and works well, and when it weakens, function declines. Pollack and other researchers have observed that disease at the cellular level tends to go hand in hand with losing EZ water and its negative charge [4].
The mechanism is simpler than it sounds. The EZ layer beside a cell's membrane holds a negative charge, while the water just beyond it holds a positive one, much like the two ends of a battery. Pollack's work describes this separation of charge as a source of power for nerve signals, communication between cells and the body's internal electric fields [7]. Laboratory experiments have also found that the charge of water solutions varies measurably with what is in them, which fits the electrical picture EZ water research describes [11].
Researchers looking at water from parts of the world known for long life found that it shared structural features with the water inside healthy cells, including a negative charge. They also observed that the negative charge measured in healthy cells is much lower in diseased or dying cells [9]. That finding does not prove that drinking structured water reverses disease, but it does suggest that a cell's charge and its health are connected in ways researchers can measure.
What We Noticed: Exercise, Circulation and the Blood Experiment
We want to be clear about the line between personal observation and clinical proof, because we think that honesty is what you deserve. Over several months of drinking structured water, we noticed a gradual drop in cardiovascular resistance, meaning how hard the heart and lungs work during exercise. Exertion that used to leave us short of breath became noticeably more comfortable, not overnight, but steadily enough that it was hard to ignore. In the plainest terms we can find, it felt as though something in our circulation was flowing more freely.
This fits with work by researcher Robert Gourlay, whose blood experiments look at blood cells before and after drinking structured water. His hypothesis is that structured, negatively charged water may make red blood cells less likely to clump together, so blood moves through the vessels with less resistance. Red blood cells normally carry a negative charge on their surface, which keeps them gently pushing away from each other, a bit like the matching ends of two magnets.

We are not presenting this as proof of a medical claim. The physics of charges pushing each other apart is well understood, and published research describes the link between EZ water and a cell's electrical charge [2] [6]. Hydration, Digestion and How Nutrients Reach Your Cells
The body needs a wide variety of foods to get the 80 to 90 essential minerals and nutrients it uses each day. Getting those nutrients from food is only half the picture, though, because the other half is whether your digestive system can absorb them. We believe that process depends in part on the quality of the water your body has to work with. Poor digestion means fewer nutrients taken up, and over time that shortfall can show up in ways that are easy to blame on diet alone.
Pollack describes EZ water as hydrating cells more effectively than ordinary water, which matters because nutrients move into cells partly by following the cell's electrical charge [1]. The idea is that when the water inside a cell is structured and negatively charged, the cell has a stronger pull for drawing in minerals, amino acids and other nutrients. When that charge is low, the cell becomes, in simple terms, a less effective receiver [5]. That is why we see the quality of our water as part of the quality of our nutrition, and in many ways as coming first.
Our daily guide is body weight in kilograms multiplied by 30, which gives a total in millilitres to drink in four portions: before breakfast, lunch, dinner and bed. Drinking before meals rather than during them avoids watering down stomach acid, which the body needs to break food down properly. It also readies the digestive tract for the meal ahead. It is a simple rhythm, and with structured water we find the body notices its consistency over time.
The Blueberry Experiment on Our Windowsill
Science explained in the abstract can feel distant from daily life, so we want to describe something you can see. Since November 2024, two containers of water have sat side by side on a windowsill in our home, each holding fresh blueberries at the start. One holds town-supply filtered water, about as clean as tap water gets by most standards, and the other holds the same water passed through an MEA structured water device. MEA stands for Magnetised, Energised and Activated, and the device is designed to reorganise the water's structure and restore its negative charge [10].
Almost two years later, the berries in the filtered tap water have broken down completely and sunk into dark, murky water. The berries in the structured water are still floating and look intact, and the water is relatively clear. It looks to us as though the structured water holds back the microbes that cause decay. That fits with research reporting that MEA structured water penetrates cells more readily and holds back harmful microorganisms better than ordinary stored water [10].
It is a home comparison rather than a formal study, but it is one we can see every day, and we find it hard to feel indifferent about it. The water we drink becomes the water inside our cells [12]. If a berry responds this differently, it seems reasonable to ask what two years of that difference might mean for the 40 trillion cells in a human body.
Where the Science Stands and Why We Think It Matters
We want to be straightforward about where the research stands. Pollack's EZ water hypothesis, including the proposed H3O2 structure and the way it separates charge, is still being actively debated by scientists. A critical analysis published on arXiv acknowledges the proposed structure while raising open questions about whether parts of it are physically plausible [13]. This is how science is supposed to work, and we do not think the debate makes the underlying observations less meaningful.
The charge separation, the exclusion zone itself and differences in electrical charge have been observed and recorded in laboratory settings [3] [11]. What is still being discussed is the exact molecular explanation for those observations.
Research on EZ water describes it forming naturally in spring water, raw vegetable juices and glacial melt. It can also be encouraged to form with infrared light and by swirling water into a vortex [15]. Pollack's work was featured as a keynote at the Institute for Functional Medicine's annual conference, a sign of growing interest among integrative clinicians who work with real patients [14].
For us, it is the combination that counts: laboratory findings, our own experience, a visible experiment at home and a mechanism that makes sense. Together they are reason enough for us to drink structured, negatively charged water every day and to offer it to our family. We are not asking you to take that on faith. We are asking you to look at the evidence, think it through as you would any health decision, and reach your own conclusion.
We believe the water you drink is not neutral, because it carries a structure and a charge into the 40 trillion small engines keeping you alive.
